Sure, you can buy each one and complete the basics and sell them. Once you've done this to all 3, you then have access to the elite skills to unlock. Same as before. However, you also need 3 variants with completed elites to unlock the master tier (if you want the extra module slot). Since you sold 2 of the 3, you would have to buy them back. Which is a tremendous waste of money. Like seriously, you would get less than half what you spent when selling. That's what everyone is cautioning about more than anything.
There is one important note, also mentioned already. When unlocking the master slot, you actually don't need 3 variants of the SAME chassis, you need 3 variants of ANY chassis of the SAME weight class to have elites completed. No help if it's the first chassis you are leveling in that weight class, but on your second, you can finsih the elite skills and unlock the module slot without having to elite 2 more variants. You do have to complete the basics on 3 variants of the same chassis still so you have to buy 3 mechs of every chassis just to reach elites.
