I made a pizza with diced mango as a topping a few weeks back.
Didn't turn out as well as I hoped it would.

the topping is cheese, anything else is between the cheese and the ground.

If it's a really good pizzeria, who I trust to do the basics right, I'll typically go with a good old-fashioned Margherita. Although again, if it's a good pizzeria who know good cheeses from trash, I love a good Quattro formaggi.
Sometimes I go wild and take either chicken or tuna with red onion and black pepper.

When making at home, and for myself, I use vodka sauce as the base instead of tomato sauce. Anchovies, and jalapenos and dollops of cream cheese for toppings, all under (never on top otherwise you crispify the anchovies and peppers) a mix of mostly mozzarella and a bit of romano or parmesan added in. If you are not into anchovies try it with kalamata olives instead.

When I lived in Vermont, the local pizzeria had a Vermont Special:
Cheese, maple sausage, and green apples as topping with apple butter as sauce.
It actually worked quite nicely.

When I run out of toppings sometimes I take those small cans of vienna sausage & slice them up into wafers to use in place of pepperoni.
Seems like you can do just about anything with pizza toppings and it will still come out ok.
