IS Hunchback has good variants focusing on laser-boating, LRM's, SRM's, ballistics.
Shadow Hawks give lots of options for combining different weapon types. They're not meta but not bad either. For example the SHD-2D has 1B, 3E, 3M hardpoints, and it can halfway run almost anything you want. The Kuritan 2K model is a downright good mech for all-laser or laser+SRM builds.

The Wolverine also uses all three weapon types, but I'm not familiar with them.

Oops. That's only in the thread title, so I missed it. Not cheek, just reading comprehension failure. On topic then, HBK and SHD are about the only mechs that can capably do all three (HBK can't do a true missile build, but definitely in combo).
GRF does energy (hero) and missiles both exceptionally well, but no ballistics.

Nowhere meta but a nice mix of anything you want.
Also can't go wrong with a griffin, wolverine, enforcer or hunchback.
Hunchie and SH have the most variety but all can be used to great success.
Ps. Don't have a crab yet, but will probably be my next mech.

However, if you're looking for a mech line that will do what you seek, then you have a few more options. Centurion, Hunchback, and Shadowhawk, are the three that I've used over the years, and enjoy. These three mech lines offer all you're asking for, to varying degrees.
While they may not be the most meta mechs, they are reliable, and fairly idiot proof (which is good for me). A mech is only as good as its pilot, and if you're like me, and you enjoy simplicity while being combat effective, you might give them a look.

12xERML? can do! (beam heat perks ^.^)
2xPPC 4xMG? can do! (mg perks ^.^)
2x15LRM? can do! (LRM speed and spread perks ^.^)
jumpjets? check!
UAC5 variant is fun but needs a lot of ammo, lopsided UAC10/20 can also be fun with ERSL's as backup
nova is the all purpose, does everything, load out dress up doll of the medium mechs
at leas one of its omni pods has a perk for any ocasion

Shadowhawks are good too, but suffer from a very restrictive cockpit view.
