Most likely the HIghlander, since they've yet to add a Mech in its tonnage or an Assault Jumper.

The Annihilator is canonically exclusive to the Wolf's Dragoons until the WoB Jihad (3067-3081).
The Devastator only has a total of four canon variants (if one includes the one-off "DVS-X10 MUSE EARTH"), and the two that are time-line appropriate (the DVS-1 (3036) and the DVS-2 (3048)) are effectively identical in terms of loadouts/hardpoints.
The Mauler (the proper Mauler, rather than the failed Daboku (introduced in 3038)) is listed in the Master Unit List as making its debut in 3048, but is listed in the TROs as being in testing as of 3052. Moreover, the MAL-1R would be the sole timeline-appropriate variant if the 3048 date is taken as correct.
The King Crab was introduced at the end of the Star League and never went extinct, but it also suffers from a dearth of timeline-appropriate variants (the KGC-000, KGC-0000... and maybe the KGC-010 and KGC-000b, if LosTech is made at least semi-prevalent) as well as sharing the Devastator's problem of homogeneity within the variants.
The Highlander also suffers from a lack of timeline-appropriate varants; the HGN-732 (the variant equipped with a Gauss Rifle) doesn't canonically go back into production until 3056, leaving only the HGN-733 (and if the HGN-732 is out, the HGN-732b is also out; all other variants include or depend upon technologies that won't be recovered or invented by the IS until after the Clan Invasion).
The Thug has three timeline-appropriate variants, but they are all relatively homogeneous in terms of loadouts/hardpoints.
The Hatamoto-Chi has two timeline-appropriate variants (three if one includes the one-off modification of one of them), but they are all relatively homogeneous in terms of loadouts/hardpoints and identical to those of the Thug.
My top-three guesses for the next Assault 'Mech to be revealed at or prior to launch would be the Banshee, Cyclops, or Zeus.
Each has plenty of timeline-appropriate variants (5-6 apiece) with plenty of variation between the variants.
Each is also an iconic and relatively common BattleMech within the BT/MW universe.
"Honorable mention" goes to the Charger, with six timeline-appropriate variants (including two jump-capable variants: the CGR-1A9 and the CGR-3K) and the Victor (with four common timeline-appropriate variants, all of which are jump-capable).
For me, a "personal preference mention" goes to the Marauder II; however, it would have issues as it is considered to be among the Unseen, in addition to having only three timeline-appropriate variants (the MAD-4A, MAD-5A, and MAD-5B).

Well you have the Hatamoto-Chi, Hatamoto-Hi, Hatamoto-Kaze, Hatamoto-Ku and two C3 variants of the Chi. Most of the variants are crap but you certainly have more than just the good Thug clone primary variant.
