If i recall correctly, there was a post in the official mechlab post about if you swap a LRM for an SRM (for example) it will look visually different etc etc, so it should hold true if you drop out the PPC's for a couple more mediums, or a large for laser for that matter, then there should be a change in the overall look and number of barrels present.

Whether or not it actually happens like that, time will tell.

I would expect Yes.
While the devs stated some weapons, when replaced, won't change their appearance, the PPC and (for instance) a Medium Laser would pretty much have to look different.
