I always associated iconic 'Mechs with frequency of appearance in the previous MW videogames. The unseen obviously earned their spot there, even from being copied designs. To me, the big ones are the Whammy, Mad Dog, Timber Wolf, Dire wolf, and the Orion (though I doubt many will agree with me on that one).

The lighter chassis never really earned any special place in my mind as iconic, just because they are generally not the first thing you will shoot at. You see any of the above listed on the battlefield, you immediately know what you will target first.

I'll admit that for me mechs (Clan, Inner Sphere and Star League) from the 3025 and 3050 tech readouts are the most "iconic". However, for me it is not so much nostalgia as I first got into battletech with MW2 (ok, a little nostalgia there) and didn't start on the TT until the end of the Clan Invasion era and beginning of the Fed Com Civil war era. For me their status as the originals makes them iconic, not to mention that in one variant or another they still make up a large chunk of the militaries of the various factions (at least according to the random assignment tables in in Field Manual: Updates etc; I admit that that is my most recent source for assignment tables for most factions).

In keeping with the original question I will try to suggest a few for the post-3067 era for each house and the Ghost Bears, Jade Falcon's and Wolves. I'll stay clear of the reseen since their iconic status piggy-backs on that of the unseen, to an extent.

Kurita: pretty much any omni from TRO3058 plus A: Akuma(3067), H: No-Dachi(3067), and M: Daimyo(3055) (No lights b/c other than the Raptor and Owens omnis, nothing comes close to Jenner and Panther. Also, I only listed one for each of the other weight classes since there are 1A, 2H, 3M, and 2L in the omnis.)

Davion: A: Sagittaire(3067), Templar(3067), H: Hammerhands (3075, sorry DarkTreader), Penetrator(3055), L: Osiris(3067) (No mediums b/c, as with lights for Kurita, nothing compares to Enforcer and Centurion for Davion IMHO. Similar situation with lights with Valkyrie and Javelin having few possible rivals.)

Liao: A: Yu-Huang(3060), Pillager(3058), H: Ti Ts'ang(3060), Lao Hu(3067) M: Men Shen(3060) L: Duan Gung(3060) (Vindicator and Raven similarly eclipse most rivals in their respective weight classes as described above.)

Marik: A: Grand Titan(3055), Albatross(3055), H: Perseus(3067), Tempest(3055), M: Wraith(3055), Apollo(3055), L: Hammer(3055), Jackal(3055)

Steiner: A: Fafnir(3067), Hauptman(3060), H: Falconer(3055), Defiance(3075), M: Uziel(3067), Bushwacker(3058), L: Hollander(3055), Razorback(3067)

For the Clans the selection is a little narrower as the 3050 omnis still dominate;

Jade Falcon: A: Turkina(3058), H: Night Gyr(3058), M: Black Lanner(3058), L: Fire Falcon(3058)

Wolf (crusader and warden):A: Cygnus(3075),H: Linebacker(3055), M: Pouncer(3055) L: Pack Hunter(3060)

Ghost Bear: A: Kodiak(3058), H: Grizzly (3058), M: Ursus(3060), L: Bear Cub(3075)
