You don't in a match. Once your mech is destroyed that's it for you for that match. After that you can spectate the rest of the match or quit the match to drop in another match in one of your other mechs.

Exactly. As the OP seems to be a new player, I'd highly recommend watching the other players to learn the ropes of this game. At least to me, that was a pretty big help back when I started.

One reason the game does have big learning curve. But it really forces you to think about what you are doing and places a big emphasis on team work. Because you are only going to get one chance in a game.
If you die you can't help your team. If you die the team loses help.

In the short run you cannot. There are plans where if you have more than one mech you can use them to 'spawn' within a new mech after you die, but technically you would be "another pilot" in "another mech" rather than the same person. This will not be in for at least a month or two, unfortunately.

What you can do in the mean time is try this.

Click the robot silhouette in the upper right, and click on "Testing Grounds."

Use this area to practice.

The only thing to watch in Testing Grounds is that not every thing (specifically Pilot Lab abilities) works the same as it will in game.

Welcome aboard and have fun! (remember, dying can be fun . . . :( )
