I would like to see a functional stereo system that would allow control of Windows Mediaplayer or Winamp, so I can pipe my favorite music into my cockpit and be able to change my playlists all from a control on the instrument panel.

For me, my usual combat playlist consists mainly of classic heavy metal. Dio, Iron Maiden, the older Metallica, Danzig, etc.
