I haven't actually used the weapon group tab since I'm so used to setting it in game. Is it possible that it saves what you do in that tab and reverts it back to that after the match if you made changes during it?

Aways save loadout - then adjust/save weapons - they save loadout again. Take a little extra time, but I usually don't put modules on until the very end of this process.
Set up chain fire or R/L adjustments in match.
I always stay until the end of the match as well - that might make a difference in the saving system.

Such that on many mechs the list would look like this:
O Left arm laser
Right arm cannon
+ Left torso laser
Right torso laser
Center torso missile
There are, of course, some exceptions (the arm lasers on the Mad Dog come to mind). Worst case scenario, just take the mech into the Testing Ground and set your weapon groups there. If your client isn't saving weapon groups from match to match something is very wrong. Changes to your weapon groups should carry over, especially if you activate chainfire (you can't set chainfire in the mechlab at all).

It should be saving adjustments you make in game though.

i kind of wish the weapon group screen got an update, showing which component they are in, it would also be nice if there was a way to set the chain fire mode for the group.

But on most mechs, it does organize weapon types into L/R.
It's a pity we still have to test it in training grounds or set it up in the match. On a mech like the Nova, it takes a bit of time to get it right.
