The Quickdraw would be a good choice, since its very wide spread (but not Steiner specific).
According to Sarna.net there are no typical Steiner-heavy Battlemechs included in MWO, BUT there is the Griffon, which is more or less Steiner-exclusive and weighs in at 55 tons.

Also all the Unseens (Marauder,Rifleman,Warhammer,Archer) are so ubiqutous, they could count as typical Steiner.

Do what makes you happy.

By the numbers? Odanan's got it posted over here under the "Assignment Tables" spoiler button.

Steiner seems to love their Archers, which are twice as common in the assignment tables proportionately as each of the next most common mechs. Nearly 20% of their heavies tended to be Archers. That seems safely characterized as "iconic" proportionally. (for reference, Zeuses make up 25% of Steiner's assault mechs)

Thunderbolts and Warhammers are each half as common as the Archers (10-percent-ish).

Next after them is the Rifleman, and from there the numbers bunch up a bit more with the Orions, Grasshoppers and Quickdraws.

1) By a wide margin: Archer
2a) Warhammer
2b) Thunderbolt
3) Rifleman
4) the pack: Orion, Grasshopper, Quickdraw.

Also: Griffin's a pretty iconic Steiner medium mech (another 20-percent-er). Just sayin' ;)

Zeus is mech created by Lyran Alliance Armed Forces but for the officer of House Steiner there is only one choice - Atlas. Atlas is the true icon of our glorious military. The bigger the better.

Griffin and Atlas. I think they have a few Commandos running around as well but if you aren't personally bringing 5 Atlas in your drop deck you will displease your Steiner overlords. 6 if you're fighting clans.
