Well... A projector can only deliver a maximum of whatever resolution it is rated for as its maximum. If by 'eyefinity resolution' you are thinking of something equivalent to three 1080P (or higher) resolution monitors combined into a single large eyefinity display group... then I'd say "No, you aren't going to be able to do that with a single projector".
You could possibly do a decent display with 2 projectors, depending on how demanding you are about the resolution. Remember, with a projection screen, you don't have the issue of a bezel potentially covering up your targeting reticule(s).
However... based upon your sketch, you have an additional challenge. You depict a cylindrical section arrangement, instead of flat projection screen(s). That will necessitate using software, such as Warpalizer, or nthusim, to handle adjusting the beams to make it look right on your curved screen.
If your priorities are lower costs and less hassle, buying additional flat panel displays is almost certainly your best bet.
