No rearm
No extra coolant
You pack your lunch before you go. Or, you live with being hungry.

But I must be honest I don't know if I would want it because honestly how fast can the Tech's slap on new plates of armour and reload you weapons?? I am thinking a lot longer than a few seconds

The MW3 Mobile Field Base was horrific and yet another contrivance to make a single player game less daunting. Repairing mechs takes hours for all but the lightest of work.
The idea that reloading a mech is easy amuses me to no end as realistically armor would be heaviest over ammunition storage and thus not the easiest to access due to needing to be able to survive battle damage.

Notice how I said game mode, no one would force you to play it. It's an alternative to team death match or capture the flag.
One team could be defending, the other attacking.. or just have straight up 2 mirrored bases to prevent imbalances.
Then you could always do a dropship battle too. I guess the possibilities are kind of endless now that I think of it. haha.

I want a Battletech game, not an arcade game with instant mitigation of one's problems like emptying your ammo bins, burning your heat sinks, or damage in general.

How about we just don't put the arcade-game powerups in and just shoot each other as Herb intended.
(Seriously, no. They're literally in MW games to make them more arcade-like, and have no basis in canon.)

Dumping ammo was available in previous iterations, and is supported in canon, novels, and the Tabletop. In a game like this, it would also be punished by replacement cost as well (but it's cheaper than repairing your shredded mech if it does explode).
I'd be happy if it were handled similar to how the TT does it, requiring several seconds of standing still and an automatic explosion if the corresponding rear torso is hit.
On the subject of MFB's, it takes 15 minutes per point of armor to be replaced per TT rules (that's 4 hours per ton). The MFB is not for in-battle repairs, they still operate by the same scavenging/repair rules as any Mech-bay does. All it does it allow your field base to be moved according to shifting battle lines.
The MFB in Mechwarrior 3 was a single-player solution to let you mow down wave after wave of mechs. It has no place here.

I'm talking about "mitigating empty ammo bins" by instant reloads from a MFB, rather than just dumping ammo (which was more damage control, and could be done in seconds anyway without an MFB.)
