A lot of really good suggestions here. Let's see if I can add some:

Vision of Escaflowne (the original OVA, not the Escaflowne TV series)
Mobile Suit Gundam 0083: Stardust Memory (my favorite Gundam series)
Detonator Orgun
Space Knight Tekkaman Blade (similar mecha designs but different in tone and scope)
Yu-Yu-Hakusho
Macross Plus (anything with a Yoko Kanno soundtrack, really :D )
Armitage III OVA (again, loved the original. Not sure about the TV series)
Moribito
Blue Submarine no. 6
The Hakkenden
Samurai 7
Ruroni Kenshin
Kiba
Wolf's Rain
Bubblegum Crisis
The Guyver (gory)

Genocyber (also gory as hell)

If you're looking at movies you also have to include the original "Vampire Hunter D", "Ninja Scroll", and possibly "Battle Angel".

Well, an Anime thread in the Kurita forums...

I guess it works.

But Kurita, if you go full weab, I'm not helping you fight the clans. I don't want to have to run every chat message through ComStar Translate.

Top fav's are Ghost In The Shell and Akira. But newer, I loved Attack On Titan. I'd also love more suggestions!

Witch hunter robin is good. Also Outlaw Star. And anything from the galaxy railways universe is good too.

Edit, if you want over the top fun. Slayers is great as well.

Older Guyver is best Guyver! ;)

Also, if you get a chance, check out "Baoh: the Visitor" - it's basically "Guyver x JoJo" (and predates both Guyver and JoJo, and was made by the same guy who eventually went on to make JoJo).

Also: Bubblegum Crisis (the original), Casshern Sins, TTGL & Kill la Kill, RahXephon, Gundam: 08th MS Team, and Getter Robo Armageddon are good.

Currently watching: Aldnoah.Zero, Gundam: Reconguista in G, Cross Ange, and Terra Formars

i'm not entirely sure where you're located, but crunchyroll.com is a good site if you're in the US (or worldwide - you just get a more limited selection) or if you're lucky enough to be in Oz, then try animelab.com.au both sites are either free of offer free content.

as to my absolute favourite, i would have to say the Fate series (Fate/Zero, Fate/Stay night, Fate/Unlimited blade works)

as to recommendations, you mentioned mecha, so i'll stick to that as much as i can.

Code Geass - it got a bit weird towards the end (second season onward) but the idea was okay. over-hyped in the end though

Full Metal Panic - First season was brilliant, it has its plot hole in the '"whispered" aspect that kinda puts a supernatural twist to some parts of the show, but for the most part is can be dismissed. the FUMOFFU season is a collection of the comedy bits that were cut from the main two seasons to keep them in a more serious mood, but excellent comedy anyways

Mai HiME - yeah, its "magical girl" but those girls "summon" mecha, so it kinda fits.

and for some non-mecha:

Attack on Titan - its story is about giant Titans (between 3m and 15m tall) that swallow people whole. humanity is cowering behind 50m tall walls, afraid to venture outside into the titan-infested wilderness, until one day a titan large enough to see over the wall appears, and then kicks a hole in the wall for its smaller titans to invade the city.

Black Lagoon - Pirates! who doesn't like Pirates! and i'm not talking the over the top one piece kind, i mean real life like gangsta style pirates. brilliant, so long as you don't let kids near it.

Sword Art Online - This show starts off great! get stuck in a virtual reality MMO, where if you die in the game, the hardware fries your brain! talk about hardcore mode! second half of season 1 is still okay, just not as good as the first 14 episodes. season 2 is almost as good as season one, but it kinda has the "been there done that" feel to it.

Fate/Stay night - This comes in three (four) seasons and a movie, originally from a graphic novel. the original series (Fate/Stay night) focuses on the first play through of the graphic novel (stay night route) and is self-contained. the second series (Fate/Zero) to come out is a prequel to stay night and deals with the events leading up to the first series. The movie (Unlimited blade works) is a movie length edition of the second playthrough of the graphic novel, The Third series focuses on the same route as the movie, but is broken into two seasons worth of anime.
Currently, the series focusing on Unlimited blade works is showing in japan at the moment, so if you're adverse to subs, then stick with fate/zero and fate/stay night
wither way, pick up fate/zero (its out in dub form, and on DVD in most countries) first, since it sets the scene for the other series (although, being a prequel, it does have some spoilers for the first season, but nothing MAJOR - unless you REALLLY dig into it) and then choose to either watch Stay Night if you want DVD's or go to either of the sites above and watch Fate/Unlimited Blade Works in subs.

finally,
Tokyo Ghoul - its graphic (especially if you can get your hands on the un-censored version) about ghouls that look identical to humans, but can only survive by eating humans. its morally grey and with great animation.

Trigun is brilliant. Code Geass, Death Note, Steins Gate, Ergo Proxy and Attack on Titan are all very good.

How could I have forgotten about Black Lagoon. I named my favorite mech Revy after all...
