... this is why I buy Ground Sirloin and Ground Chuck. You always hear of Ground Beef recalls because cheap Ground Beef is made with the scrap material from random parts of Cow. Using a large number of bodyparts as your source material, especially when they're second-hand cuts, increases the risk that at least one part that gets added in was contaminated - which thereby contaminates the whole batch. Ground Chuck uses meat sourced only from the Chuck cut, and Ground Sirloin uses only the Sirloin cut. When you deal with only one dedicated source of material [that isn't being passed around], you will experience far fewer instances of contamination.
