Cockpits where placed in the head for one reason, its the most distant place on a mech from that highly radioactive reactor core, and its ability to steralise the Mechwarriors...

Do you stick your head up over the tops of things and sit there?
Do you keep explosives (ammo) in your cockpit?

Depends.. I pilot both Cats and Awesome.. and yes, most instance it was the friggin cat which got nailed. I hate Cats.
And no.. one must be mad storing ammo in cockpit.. virtual or real..

I raged in chat about aim bots.
Then I realised I had walked straight up to a catapult with twin ac20s and stood in front of him. My bad.
Keep moving and twisting and you will hardly ever get head shot.

Catapults are real easy to headshot, awesome needs a bit of luck.
Just turn away from enemy when recycling weapons, and keep moving at least bit sideways all the time, and it will become much more rare to get headshotted.
Catapults have some excellent characteristics, which are balanced with easily hit cockpit, no arm movement, and stuff like that. K2 and A1 are top tier mechs, decent mobility mixed with good firepower. Survivability is the biggest tradeoff there.

Maybe it's because I keep moving in the open and always try to keep cover between me and the enemies I'm not actively shooting at??
You might want to try the thing called "situational awareness" too...

Serious answer: It's a bad idea, as it removes one of the main tactical options when facing someone. There'd have to be some crazy drawback like reduced visibility or... umm... cooking yourself with the engine if heat goes above 90% or something. Delicious boiled Mechwarrior!

I also don't really have a problem with it. I mean, it's odd to think about giant gauss rifles or gargantuan AC20s mounted to tiny machine gun slots, but it doesn't really bother me.

Someone took out my hunch with a snipe shot, I was gunning it along a good speed and the head just vanished on my paperdoll thing as the mech dropped and slid to a halt.
I was pretty shocked but if it was luck or epic skills it was still a sweet shot.

I could not agree with this more heads shots and back shots are the worst i have ever seen them in beta so far. Many times i have broched this topic that the mechs die to easy and to fast. For 35-100 ton machines they seam like paper dolls. You would think you would run out of ammo before you killed one if you read the BT novels it would take a entire unit to kill mechs with team effort and concetrated fire to down one.Now you have head shots and back shot eather killing the mech in 1-2 shots all day and night long its just idiotic really. And yes i have been head shot many times in multiple mechs at the start of a battle so i know the OP is right and should be mad we all should be mad at dieing so easy with or without skill or any other factors.

Torso Cockpits also have a lot of disadvantages, according to the "rules." It would actually be more challenging to use it than not using it at all.
