The CTF-1X - a typical build for the chassis includes Endo Steel, a 340 XL Engine, six Double Heat Sinks outside of the engine (nineteen in total) and five Large Lasers.
This 'Mech build boasts decent burst and sustained damage potential at multiple ranges - it's also pretty fast for a Cataphract, and able to keep up with fast Catapults and many of the slower Dragon builds.
With steady aim and good tracking skills, it can still be pretty competitive against the more specialized builds.

I'm running these currently, and having fun with it.
STK-3F
Stock weapons loadout (4 Medium laser, 2 Large Laser, 2 SRM 6, 2 LRM 10)
Endo Steel.
Slightly increased engine for slightly better speed and more in-engine heatsinks.
AMS and 1 ton AMS ammo
Double heatsinks
The rest of the weight goes into maxin armor and adding heatsinks.
Flame
Endo Steel, Double Heatsinks, 360 XL engine.
ER PPC
3 Medium lasers
SRM 6.
Basically a Grand Dragon with the LRM 10 switched for an SRM 6
Cataphract 1X
2 ER PPC
2 Medium Lasers
1 UAC/5
My Maraudaphract. An attempt to turn a Cataphract more or less into a Marauder.
I'm having fun with them all, and that's really all that matters.

Non-boating builds? I know not of these non-boating multirole builds of which you speak.
I build my mechs to do a job and do it well.
The only one I have that might qualify would be my DDC with 2 large lasers, 2 UAC/5s, and 3 SRM6. Long-mid range direct fire with some up-close punch. I don't have anything with a single LRM system. Either that's what I'm doing and have backup weapons or I'm maneuvering to deploy my other weaponry.
