I've experienced many many similar problems. Though I find the testing grounds give better results then with real combat.
5 SRM6 stalker. I've fired 3 volleys at 50 meters onto a moving dragon (slow one going 70kph I think) and didn't even strip his armor , all were dead center, and after 3 of these volleys (potentially doing 225 damage) he had a red center, and orange side torsos.
225 damage, would have striped EVERYTHING even if it was spread evenly on the top parts of the mech.
I had another similar moment today , Hunchback 4SP - total armor 338 max. 2.5 volleys (I missed most of the mech with the spread). First volley orange side torso, yellow everything else. second volley - red RT, orange CT, orange LT yellow arms - so now I've done 150 damage which is half the total armor for the hunch (suppsedly).. the PARTIAL hit, strips everything! WTF?
I find that slower or stopped mechs die instantly, but some how when their moving, it causes srms to act really inconsistently. Atlases and other stalkers get hit fine with it. But even Catapults walking straight at the me dont' get instantly stripped to the core from a single volley.

I can confirm 100% that Awesomes are receiving amplified damage from LRM fire. My Awesome seems to get absolutely oblitered by LRMs, far more quickly than any other mech. Even small volleys seem to cause massive damage. Something is amiss here.
