When I go full throttle, the pilot moves the throttle back and while in reverse, he pushes it all the way forward. Happens at least on Catapults and Atlases.

Seems relatively unnoted though. Not many people look around as they pilot I guess.

Yep, noticed that too.
I am also quite appalled at the fact that the player is not allowed to pilot a mech while cockpit viewing.
That is far beyond my understanding why I can't look at the side window and, say, turn my mech at a time. The same with battlegrid. How does looking around and viewing a map can prevent pilots from controlling their mechs? It shouldn't be this way.

I can do that just fine. I just press A or D while holding control and moving the mouse around. Nothing stops you except how flexible your fingers are. In fact I do it very frequently. It's a requirement to have independant control of your arms while moving your mech and very much a game mechanic that is necessary to learn sooner or later.
