AFAIK, that's the total FoV for your eyes including possible eye movement. IIRC, its about 90° horizontal for a single eye (coincidentally that's the default horizontal FoV for FPS) and about 180° for both eyes.

True, HUD is also a problem for stereoscopy. It's a 2D overlay just drawn over the scene. Perspectively, it's effectively like a texture at focus distance, but no object can be in front of it (therefore it looks weird in stereo-3D).

Yeah, that's more of a real-world HUD: it's like an actual texture of an object in the virtual world. Note what we currently have is more like the HUD of an HMD, it moves with our pilot's head (like in free look).

Ok, all of this is new to me, and I'm not quite following this. I can change my Field of View? Is there a slider button for this?

Not yet. You can edit your user.cfg though. Add a line
cl_fov = xx

Where xx is your desired FoV (in degrees). Default is 60. Go to 70-90 to gain more peripheral vision.
