I just give 'em first names as if they were people, tend to alternate between male and female. If I need inspiration I just look at lists of retired hurricane names.

only notable one in my bay last time I played was the SDR-5K I went ahead and bought. Named it "Spodermun". A silly name for a silly mech.

My three Centurions are named Quirinus (my CN9-A, named in honor of an early Roman battle god), Apollo (my CN9-AL, aptly named after the (Greco-)Roman "Lord of Light"), and Summanus (my CN9-D, named after the early Roman god of nocturnal thunder).

My mech names come from a combination of the mech's model, macross names, robotech, or some clever pun relating to culture.
