From what i've seen so far all the mechs try for a humanoid appearance. Am i the only one who thinks something different would be a bit cool? There was a mech game called mechrage which was cancelled but the sniper type mech looked like a spider which i thought was awesome. It made it a bit different from your run of the mill mech games with the different type of models.

Battletech cannon has Quad mechs, but pgi said they won't be in the game.

Are you referring to bi-pedal (two legs) mechs?
They are the most common. Also pilots like to feel like Knights in armor (even if it is a giant walking tank). Chicken legs are not usually preferred, but pilots put up with it.
As for more than two legs, Quads are the most common. However due to the lack of any humanoid feature they:
1- Give a less Knight-like feel to the mech. (we pilots have Ego issues)
2- The mechs are hooked up to our nervous-system. Quads are likely as hard to control as you in real life running on hands and legs, and the effort usually does not pay off.
This is not to say they dont exist. Examples of some Quads that could be in game atm.

However, due to complications of balance, models, mechanics, complication of the game, and more; Quads are not currently on the radar of PGI. They most likely will never be added to the game.
EDIT: I imagine that the Goliath alone would require the time and resources that could be better spent on 3 Bi-pedal assault mechs and improved netcode (as Quads would likely require an overhaul of the physics engine.)

A large portion of clan mechs are non-humanoid, as are a large portion of post-invasion IS mechs. Should either of those two things ever be put into the game you will see different looking mechs OP.

the scorp looks like a cool mech, only 2 or even 3 hardpoints it looks like, but man, that could be a cool mech if it ever shows up. Apparently it comes back in 3068 according to sarna, or at least the one prototype of the LAM. Its fast too, and if MASC makes it in for the Flea, this could be a possibility.
Oh and HELLZ YA to the Golith. Once we get a time jump to the 3060's, both of these mechs should come

The standerd Scorpion comes equiped with two weapons. But, looks like it has more.
LAM (Land-Air-Mech) is something very differant from this. A LAM can transform from BattleMech to AeroSpace Fighter (Yes it can fly).
Not sure which I would take given the choise between the Goliath and Scorpion. The Scorpion is much lower to the ground and rules let it crouch to ground level. But, the Goliath is much bigger and has more weapons. Just a matter of preferance I suppose.
