One of the loading screen tool tips states that 'Gauss ammo does not explode'

It does. I've died a few times today from ammo explosions, only carrying gauss ammo...

No. The ammo explosion displayed was the Gauss Rifle exploding. It counts as ammo explosion.
Gauss ammo doesn't explode. Gauss Rifle does.

Don't ever doubt the omniscient tooltip again.

So, I'm assuming a Gauss Rifle explosion cannot be contained by CASE (it shouldn't be, unless it's called CGrSE). Is a Gauss Rifle explosion always a death ticket?

Gauss only does 20 damage, therefore if you have it in your arm, all it does is blow your arm off. If you use it in a medium/heavy mech in your torso, combined with an XL however, it - can - kill you.
