I'm normally a fan of pulse lasers, but right now my favorite weapon is the large laser. Nice heat to damage ratio and good range.

Looking at a few of these builds, I find myself repeating what I've said elsewhere. In my experience, the K2 loves the 280XL engine. It may be slower than a 300 or 315, but ~77 kph after tweak has always been enough for my builds, and it saves you 4 tons over the 315XL.
The AC/5 is underappreciated pretty widely, and is almost universally better than the AC/2. CPLT-K2 gives you substantial ranged DPS while still being very capable closer in.
As a rule, I stay away from maxing out engines, the highest I'll go with a Catapult is 300. 4.2 kph isn't worth the 2.5 tons or 5mil C-bills.

Compared to yours, mine has 5.5 kph less speed, no mediums, 1 less heat sink, 1 ton less ammo (I rarely tap it out), 6 points less armor, and a lot more durability. Overall, they are remarkably close in performance.
So, mine is more durable and 4 million C-Bills cheaper, but yours has a slight edge in speed and a bit more firepower. I'd love to see someone use both and report the results.
Also, I have to back up your point on the AC5. Twin AC5 and ammo is comparable to a Gauss and ammo in tonnage and crits, slightly more heat, but also better DPS.

2 Ultra Auto Kannons (150 round; 6 tonnes)
2 Medium Pulse Lasers
STD 250 engine
13 Double Heat Sinks
Endo Steel Armor
Max Armor; except 41 on each leg
48% Cooling Eff.
5.90 D/P/S
Or....
2 Ac2 ( 375 round; 5 tonnes)
2 Large Lasers
STD 250 engine
14 Double Heat Sinks
Endo Steel
Max Armor; except 41 on each leg
35% Cooling Eff.
4.28 D/P/S
I tend to gravitate toward the higher D/P/S, and it has better cooling eff to boot., so there your choices..
You have better stand off damage with the ( 600-900 meters ) LL/AC2 build, but can cause more hurt with the UAC5/MPL build in close quarter.
The range on the UAC is quite far...with a max range of 1800meters. The cockpit shake is the same at 1300meters as it is at 300 meters, so most people don't realize that the UAC5 is doing alot less damage than maximal, and tends to make them duck their heads,,, whereas the LL just doesn't register a hitt past 900 meters...
Play style and player aim/leading ability will determine your weapon load out with your K2.
In my Ilya, I love placing a three round UAC5 burst on target at 1500 meters...It causes hesitation in almost all the advancing battlemechs.. I couldn't do that with a LL and most pilots tend to shrug of the cockpit shake effects of a couple AC2 rounds hitting... you know they aren't doing mucn damage, just annoying..
but if you love AC2's then by all means use those, and having a couple LL is always nice thing...
