Even then I actually scored a few LRM kills yesterday - I'm guessing splash damage was increased - damage values for individual missiles have been severely reduced in older patches but right now LRMs are capable of stripping CT armor remarkably fast.

Edit: The point is, that although you personally can not completely hard counter BIG LRM's with your AMS, your team can completely hard counter LRM's with AMS, if they are built like a team and work like a team.
Actually, as long as the number of missiles the on launcher doesn't surpass the number of actual missile tubes on the 'Mech in total, the salvos from all of the individual missile launchers will converge in a single cloud.
I played a silly little CN9-A with three LRM10 launchers yesterday to test the new LRM flight paths and I could fire all three launchers at once, producing a single LRM cloud.
As for the last part...
Unless you're playing in 8-mans with a corp, there is no way to make every single player not only 1) equip AMS on their 'Mech and 2) form up as a single blob within the AMS' effective range.
The solo player experience has always suffered greatly with LRMs and poptarts; for the most part, they cannot rely on their team mates to know how to deal with the newest threat or even survive long enough to contribute meaningfully in the match.
There is also probably no way to fix it.
