Ok.. there are a couple i have been running into that have been getting the best of me more often than not..
One is the jager, the other is the stalker.
Those dual AC-20 ones shred . But the quad fire ones are no picnic either. Should i try to blow off an arm before i brawl um? Not really sure where there high value weapons are, If they have the AC-2's isn't it arms+both chest sides?
The stalker is another.. Seems like nothing i have tried has worked in my favor.. well outside of team killing them.

Always go left visual torso!
An overwhelming number of Mechs have their best weapons stored in their right torsos or arms - so you can never go wrong with the left visual torso!
As for your specific problem: most dual AC 20 Jagers running XL engines + their side torsos are rather weak.
Stalkers are, imho, the toughest to kill Mechs in the game. Since the CT is rather hard to hit on them you can't go wrong with sidetorsos either. Some run XL engines and will die, some others will at least lose a good chunk (50 %) of their weapons.
It's also advisable to test out the legs of your opponents every now and then.

The ballistic hardpoints are all on the arms, so if you take them out, no guns for Jagers. At most they have two energy weapons on the left and right torso. If you want to go for the arms should depend on what is already damaged.
Stalkers... well, depends on what they are running. SRMs/SSRMs, keep your distance. PPCs, hug him. Laserboat and ER PPCs hit and run, get them to shoot and overheat. Then blast them to bits.

Well when it comes to jagers, my tactic is simple, aim for a side torso, you got a 50% they might be running an XL engine and if they aren't well atleast you took out an arm and possibly some ammo. With stalkers I try to keep myself behind them, I pilot a Dragon most of the times, so i use speed to my advantage....those are my ways of dealing with them other than have the team focus fire on the target.

In one case with the Hero Stalker known as the Misery, go for the "right visual torso" or its left torso. Especially if it has a Gauss Rifle. Once the Gauss Rifle explodes, all it takes is two small lasers to finish off and kill the Misery. I can tell you this both fighting as them and against them. Destroying its left side (your right) will cause it to lose its only low to no heat generating weapon.

Stalkers are surprisingly lore accurate in this regard. Their back armor is bad by default (Alot of players seem to favor having it even lower) and their turning/twist is the slowest in the game. While not always an option it's something good to keep in mind. It's part of the price they pay to bring a lot of weaponry and armor to the table.
Jagermech's are much more dependant on what they are carrying. If they have AC20sdo not brawl them. Those things are killers up close but they rely heavily on being at that range, like the splat cat (Catapult with SRMs). The longer you can keep them at arms length the better. But here is the good news! For that speed and firepower the usual sacrifice is armor. Because most run an XL engine you do not usually need to blow the CT. Any torso will do, just pick one and keep at it.
Other builds of Jager it largely comes down to trying to win the trade. Fighting them is more or less the same as I would advocate with anything that relies on the (lighter) ballistics. They've got the range, so cover is your friend. However, their damage is 'all or nothing'. either the bullet hits or it doesn't. Plus it has travel time in the air. If you're quick off the mark you can pop out of cover, spray them with lasers and feel like Neo when the slug flies past. While heat is practically a non-issue for those weapons they do rely on ammo. Every missed shot is a victory, so keep them missing. It's rare you'll drain them dry of ammo. But at the end of a match, nothing makes me smile more than a Jager who suddenly just stops firing.
Plus, that ammo explodes. Chances are it's probably in the torso anyway, but the legs is the other favorite hiding spot. If they are close to losing a limb, be sure to take it out! just in case.

Do let us know what your piloting, and what weapons you are using. Can help us help you.
On stalkers, your best bet is to either go for the back, or to make sure you hit them with at least 2 mechs at a time. Their slower torso-twist speed makes it harder for them to track multiple targets. Lights and fast-moving mediums are probably the best mechs to take out a stalker. You just stay out of its forward field of fire.
Jagers are a different critter. People tend to build them to taste a lot more, so some have plenty of armor, some have almost none, some have soft legs, etc, etc. With the AC20 builds, it's kind of a "here's 3, you get 2" situation with armor, ammo, and speed. You have to sacrifice 1 to have 2 AC20's, and you just gotta figure out which they scrimped on. If they are slow, stay out of their firing arc, and take out their backplate. If their armor goes orange quick, see if their legs or torso is softer, and rip one of em off. It's usually the legs. if their fast and durable, run away, let em run out of ammo.
Now, as far as the AC2 fast-fire mechs, mainly don't be intimidated, and don't shut down in front of them. They seem like they do mor damage than they do, unless they ger at you when you're shut down. fight em like any other mech. I usually go for opportunistic targets, attacking whatever armor plate has already been damaged.
