I know all Clans have a unique way that they bid, the Smoke Jaguars use throwing stars, but I don't think I know what the Ghost Bear version is. Anyone know?

I believe you refer to The Clawing, which is a ritual but not necessarily a bidding ritual (though it does lend a great honor to those who survive, much less complete, the task). The bears are specifically the Ghost Bears of Strana Mechty, which is the Clan homeworld (so to speak).

You should probably ask to Jaroth Winson, Loremaster of Clan Ghost Bear (the MWO unit,i mean).

Jaroth is your man indeed...
I'll stick with the parties mentioned above.

Well as far as I know (I read ~90% of the "original" MechWarrior books (******* Dark Age)), all the Clans bid the same way.
For big things (invading a planet, for example), normally a holographic console is used that displays all the forces of the 2 bidders and both slowly bid away their stars of mechs, elementals, etc. A nice example for that would be the Phelan Kell-Triology, where the Khans of the Wolves and Clouded Leopards bid on the invasion of a planet and Phelan surpises everyone with his suggestion to bid away the war-JumpShip, because he wanted to avoid the possiblity of a planetary bombardment, if the resistance is to strong. In smaller battles, words are usually enough and no visualization is needed.
