I'm considering buying a hero Mech. WIll playing it give mech XP and contribute towards mastering that particlar chassis type? Say I have completed basic pilot training for my 2 variant stalkers and buy a Misery, will completing the basic skills of the Misery count towards the unlocking of elite pilot skills? And futher on, towards unlocking of master skills?

You are correct.
Each of the Hero mechs counts as its own variant. Play the Misery, and you get XP toward the Misery chasis which you can spend in the pilot lab. Get the basics for the Misery and 2 other stalkers and you unlock elite for all 3. Get through elite on the same mechs and you unlock master for all 3.
Just keep in mind that it's not the same for the "champion" mechs. A HBK-4P(C) is basically the same as an HBK-4P and earns experience as one. Similarly, the founders mechs are the same as standard mechs with a C-bill bonus attached. So, for example, an AS7-D(F) would earn XP as a basic AS7-D.
But if you're in doubt, just go to the pilot lab and look it up. If it counts as a full variant, it will have its own listing there.

As someone who owns every hero except the unreleased Dragon Slayer, the answer is as Konril here described. (Zomg it's another Kon!)
Also it is important to note that the Phoenix package's unique-looking mechs will count as their cbill versions so exactly as the Founders' mechs, the Phoenix ones will count toward the chassis's unlocks as well as the same "variant" as their cbill versions later on.
BLG-1(P) will be the same as BLG-1, except the P will get you bonuses equal to that of a hero mech on top of the rest.
(Also, if you're patient the hero mechs occasionally find themselves on sale for 30 to 50% off.)
