When you are skilling up your mech from basic. It says you must it says you must get all eight skills in three variants. Is this the 3 variants of the same mech or 3 of the same weight class?

Of the same mech.
So if you own a 5D Spider and complete 8/8 Basic, you need to buy the other 2 Spiders and complete 8/8 for them too before you can unlock the Elite skills.
However to unlock Master skills you only need 3 4/4 Elite of the same weight class. So if you complete 4/4 Elite on the 5D Spider you don't need to finish the 5K or 5V if you already have two other light mechs 4/4 Elite - for example if you've completed 4/4 Elite on 2 Jenners you can go right ahead and spend XP on the Master skill for the Spider 5D.
