Does anyone know how much points per second does one cap point get you? Also how does capping work. Does each mech subtract some value from the 'HP' of a point? What's that value? Do 2 mechs mean 2 times that value or something else?

I believe you get about 1 point per second per cap point. You can watch the counter tick away at the beginning of the match at about that rate.

Capturing points goes by weight, therefore 1 atlas will cap faster than 1 Jenner, but at the same rate as 2 Cents.

I think it's by number of mechs. Pretty sure weight has absolutely nothing to do with it.
