When using these AC/5's instead of UAC'5's, should I usually keep them on chain fire? And if I run the Ultras, am I right that you don't chain fire them except in certain instances?
And if my build is lacking in any way, please share any improvements you'd make, it'd be much appreciated.

I love the AC5. Especially in "arrays" like that. I was actually thinking of buying a Illy for that same build. However, a minor critique for your build would be the amount of ammo. I usually have a rule for ammo based weapons "X number of tons per X cannons/missile tubes" for AC5s I use 2 tons per cannon. So that would save you 4 tons. And you could put a bigger engine or a Large Laser in the arm. But I understand the limited use for the weight savings and maybe the ammo is a better choice.

I agree, you could reduce ammo to free up tonnage for a bigger engine. Though I would be uncomfortable with 6 tons, I think you could get away with 9 or 8. Alternatively, you could drop the arm ML and/or the heatsink. I'd recommend dropping the arm laser and a ton of ammo and upgrading to a 300XL. You will notice the difference in speed.
For most applications, I would suggest group fire. It's like a 1.5 second gauss if you do it that way. Chain may be handy if you want to suppress snipers or as a tracer to hit fast moving targets.

i'd drop the torso ac5 upgrade to an xl 300 and replace the ml in the arm with a LL. that way if you run out of ammo you still have some firepower and range.

Lots of ammo is important but not at the cost of 3 mlas, no matter what happens energy weapons will always be a good fall back if the match turns into a long slog.

Well since you only have two weapon groups you could just change on the fly as combat dictated. I have my mouse3 bound as my fire mode toggle.

This and the UAC/5 build are pretty popular builds for the Ilya.
