How about a pre-game lobby that is similar to the League of Legends lobby?
All 8 players on each side enter the lobby and have 1-2 mins to pick their mechs before the match. Each side has either 500 tons or a certain number of slots for each weight class (ie 2 assault, 2 heavy, 2 medium, 2 light or whatever). Leave it to the players to work out who pilots what.
This will ensure a variety of weight classes in the match and encourage working together. It also addresses your matchmaking problems and encourages players to have differently-weighted mechs in the lab.

Being able to select a mech from say, your ready list, would be amazing. I'm not sure about the limitations at the moment because that could get highly annoying.
