After I level 3 variants up and get elite abilities on my favorite one can i sell off the extra two and open up mech bays so i can get other mechs?

You can safely sell the mechs. The xp will be retained if you ever buy those variants back. Note that you should sell them after you have gotten all the basics if you don't care to unlock the master module slot, otherwise, you want to elite them all to unlock it on the one you want to save, assuming you own no other mechs up to this point.

I should also note that it is recommended that you keep all mechs and equipment unless you absolutely hate it or simply refuse to buy mechbays. If you ever decide to buy one thing in this game, it should be mechbays.

Yes. You can sell them once you've made the unlocks. If you sell them before you unlock those, however, you'll be stuck even if you earned the ability to unlock them.

You will need to unlock Elite on 3 variants to be able to Master your favorite mech unless you have already achieved 4/4 elite on at least 3 separate mechs in the weight class previously.
