I searched a bit, but couldn't find any info on this. What happens if destruction of your external heat sinks brings you below the limit of the required 10? Are you killed?

nope. you (probably) just operate at 90% heat efficiency. I say probably as it might be hardcoded to 10 sinks minimum, and TBH im not sure if you actually lose heat threshold/efficiency when one gets destroyed.
I can definitely confirm you dont die as i've run around in as little as 150 engines and lost heat sinks, when i only had the min 10 req.

Its only a requirement to launch, once in game, any heatsink can be destroyed (even ones contained inside the engine itself). The net result is your heat dissipation rate is slowed meaning you have to wait longer to cool off completely.
