Because it is a, physical construct on the Battlemech, and since I haven't played in months thanks in part to my computer being unable to run the game properly, I was wondering...
.. Can you shoot off or destroy the AMS turret? I mean, think of it. It's jutting out of the 'mechs shoulder or shoulders if he or she is using two, or three if one could ever be mounted in the head/face. Are we able to remove the deterrence of AMS by firing on it with our Lasers or Autocannons and destroy it if we have the sniping skill required to hit a small target, or is it just apart of the shoulder?

Nope, only if you destroy the entire limb to which the AMS is connected (in an Atlas, it's the arm).

That's not entirely correct...

AMS (and anything else stored inside of a component) can be destroyed with critical hits BEFORE the component in which it's housed is fully destroyed.

Once a component (i.e. an arm or a side torso - a specific part of a mech) has had its armor shot off, any further damage that component takes is applied to its internal structure - however, some hits that land on internal structure ALSO deal damage to the specific items housed inside of that component.

Example: My mech's right torso loses its armor. Somebody shoots my right torso with an AC10. I take 10 points of damage to my right torso's internal structure (or HP), but the hit rolls a critical and the AMS in my right torso ALSO takes 10 points of damage and is destroyed before the actual RT is destroyed.

Some other notes:

Different items have different HP - Gauss rifles for instance only have 5 HP, while the AC20 has 20. Most items have 10 HP.
Some weapons, such as the machine gun, have an increased chance to cause critical hits, and have a critical hit damage multiplier.

TL;DR version: The AMS (and anything else) can be destroyed, but not by shooting directly at it. (though you can see the little AMS cylinder on a 'Mech, shooting it just applies the damage to the component it's on like an arm or side torso). It takes a critical strike to destroy items.

On an interesting note though. If you hit the AMS turret with direct fire weapons it counts as a hit on the appropriate part of the enemy mech. If it is mounted on the right torso of a given target mech you do damage to the right torso (front) armor by hitting the AMS. To destroy it though you need to punch through the armor and take it out with a critical hit or by destroying that section of the mech.
