Double click on the item you want to dismount and on the item list on the right (appropriate, if you remove a weapon and you're looking at the engines list you have to select the weapon tab or grab it and drop it in the right list.
EG: you remove a gauss rifle (not by selling it!) open the weapons tab and under gauss rifle, you'll see "1" so you own one and you can select another part of the mech (with a ballistic hardpoint), grab that gauss and place it there or by double clicking on the item in the list.
You DO NOT have to sell it to dismount it and then re-buy it! Try to sell less equipment as possible, most of the engines will be helpful with other chassis or variants; there are people I know that have really 2 or 3 XL engines and keep mounting and dismounting them from one mech to another.

You can do the same thing, it's only less straightforward; simply select the section of the mech you wish to adjust the armor and then in the menu to the right select "armor"; once you did this to the right side of the mech section you'll see the amount of armor with two arrows, use the upper one to add armor or the lower one to take some away. Remind that armor on front and rear is shared, so if you see 80 points, you have to allocate like 70 of them on the front and the remaining 10 in the rear.
Legs, cockpit and arms don't have rear/front armor.
