Hi all,
Fairly new to the actual books so wanted to confirm one thing.
I know 3039 is supposed to include the "Unseen" mechs but from an art perspective, is it using the 3025 art, or new art for the unseen? Been searching google but didn't really find any info about it.
Given that, should I even try to search for an original 3025 or is 3039 a better read overall?

There is no art for the Unseen in 3039- just shaded outlines of the models. 3039 includes the rules for all the older Phoenix Mechs, but not the artwork.
For newer artwork, your looking at TRO 3085 (Catalyst publishing 2010) or TRO Project Phoenix (WizKids/FANPRO publishing 2003). The older artwork is in TRO 3025 or 3050, but you'll need the old FASA publishing ones circa 1990, not 1996.
Honestly if you're just looking for the artwork, TRO Project Phoenix is your best bet if you can find it. It gives re-done versions of all the variants and they look much better, in my opinion, than the older art. The older art is very much in the Gundam-style, with handheld weapons and suchlike.

3039 is a pretty good read and better represents the lore as it exists right now; not that it's changed a lot.
The original 3025 TRO is considered a classic, those who read it originally really love it, and yes, some of the unseen art is better, but not all of it.
If you're looking for an entry point into the TRO's 3039 is a good TRO to pick up.
If you want to "get your toes wet" on the timeline further up, the FAN MADE tro 3063 (NOT official) is pretty representative of the quality and layout of the official tros.
