I recently purchased my first medium mechs after strictly piloting lights since I started. When I'm in one of my lights I always see lights on both teams. Sometimes I'll get placed with a full light lance. I have actually never seen a game without lights. Now that I've been in my Hunchie quite a bit, I rarely see lights. I've played a bunch of games that literally had zero light mechs on either team.

Is this something to do with match making or weight balance? Or is it just a super big coincidence?

It's the Illuminati.

In theory the matchmaker tries to put a like number of general types (Assault, Heavy, Medium, Light) together and groups up when it can't. Need a heavy and one didn't just start a drop, grab a Medium before a light. (As far as we have been told anyway - who knows what it is actually doing).

So I would guess that left over lights get tossed into groups and should draw other lights. The "upward pull" of the assault and heavies heavy selection of Mechs people use might be pulling your mediums into higher tonnage drops.

This is only a guess obviously.

It is definitely more likely to see lights in a match if you pilot one yourself.

I wish we would get a matchmaker which fits the total team tonnage not the individual mech class.

e.g. Atlas + Spider = Jager + Catapult

This would create interesting battles.

Likely match maker and your ELO rating on new weight class.
Found this myself when I started training up medium Mechs, from when I was using lights.

Supposedly this is coming shortly after UI 2.0 goes live.

Its because ELO is different based on your weight class and possibly chassis. You will see different games and mechs because of that.
