I think I will get an assault next. As I understand it, atlas is for pushing on an enemy position or holding a position, mostly because it can take hits while doing good damage. The stalker is basically mobile artillery the way most people play it. What are the roles of the other assaults the way they are currently played, especially the highlander?

No. Those concepts are wrong. If you want to win games, know this.
Atlas-DDC is the only viable mech for using ECM coverage. You'll tend to use him at medium to long range (about 450m and above) because if you go any closer, the weapons from 3-4 mechs will melt your armour. Even if you front loaded it with 0 armour at the rear.
Other Atlas variants are fun to play but not really competitive.
Highlander you're looking at 733C mainly because of the UAC5 + PPC loadout. His main role is as high pinpoint damage output with a 30 damage alpha strike while poptarting.
Some competitive groups use stalkers because they are good laser boats from hiding in hills and firing over it. Personally I think that the Battlemaster (Phoenix Variant) is better for that role because it has equally high set energy mounts and can mount bigger engines. The stalker's only advantage is it's "slim" profile when viewed from the front. If you look at it from the left or the right, I think it is a giant target. Stalkers are good in the regard that by simply twisting your torso, you can spread damage to the least damaged side. However I find that being an XL user that's not a real advantage. I prefer a larger CT hit box. It does make the misery an outstanding variant against average players though.
I personally think the Awesome is a highly viable chassis that moves fast enough being at 80 tons (300 engine, not PB or 9M variant) that boats damage-tonnage and heat-efficient weapons like Lasers and SRMs.
The Victor is used both as a pop tart and an agile AC20 skirmisher. Its chief advantage vs the HGN is its ability to load a bigger engine (most likely XL) and move faster for its lighter tonnage. It's advantage against the Awesome in Brawling is its bigger engine and JJ.

Assault mechs kill robots and are usually hard for other robots to kill.
