Every mech in my UI in the Mechlab has an MC cost to it. Some cost only MC and some cost MC AND Credits. I see zero mechs that cost only credits. What am I doing wrong?

You can buy those mechs with either MC or Cbills

Yes, the UI is confusing on this point.
