I think removing the hands could be considered as optional - have it as a removable part in the mechlab, but if/when the things you have listed are introduced to gameplay, those abilities won't be able to be performed with a mech without hands.

Hands on a battlemech are very functional. They are used for taksed that you would use your hands for. You need to realize that Battletech is a living breathing world were things are done for a reason.

Hand actuators are used for...
  • Lifting and carrying salvage and cargo
  • Standing back up after falling over or going prone
  • Punching things
  • Grabbing things with which to hit other things
  • Flipping tanks
  • Combat engineering
I ran a Battletech mercenary campaign where my players got pretty liberal choice of 'mechs, and they ended up extremely poor. Why? The whole lance had 1 hand actuator. When they needed to bug out of a combat zone and didn't have time to deploy the half track and the loadermech stuffed in the cargo bay, they got to haul exactly 5 tons of salvage.
