I like to show my Phoenix tag, but any time I have to change my settings during a match (e.g. to turn off arm lock), the game stops showing the Phoenix tag during subsequent matches, and I have to go to the settings while not in a game to reenable it.

Same here, always takes my founders tag off.

It's a know issue sadly but you can turn off arm-lock by holding your left SHIFT-key, no need to go to the settings menu.

That's fine for a few seconds, but I have some 'Mechs where I want it off permanently, and some where I don't. If armlock was a single-press toggle, or if it rememberd the arm lock settings on a per-'Mech basis, I'd be much happier.
