All I see are mechs for sale. Why can't I click on them and see the loadouts?

They recently changed the UI. Hopefully missing/broken things like no stats in the store will be fixed in the next couple patches.
Until then google for Smurfy's mech lab - you can browse the mechs there and play with various fittings.

earning bonus. Champions are just pre-upgraded regular mechs as a short cut that doesn't spend your hard-earned

Hope that helps. Truth be told that while I know UI 2.0 was rushed out before being finished... this isn't nearly as good as what was in the first UI where you could highlight hardpoints and it'd tell you where they are.

And Smurfy. It's pretty handy. So much so that MWO's mech building aspect is being remodeled to work like Smurfy.
Oh, and I wouldn't worry much about starting loadouts on mechs. Just the hardpoints and whether or not they come with endo steel or double heatsinks. You'll probably change everything in the mech anyway and buff the armor up.

Also, the Mechlab now has a 'Mech Details' button near the bottom-right; this button gives you the fulll layout, including hardpoint location, number of crit slots, actuators, etc.

The new 'Mech details' screen is incredible, but it looks an awful lot like Smurfy's for a reason. Smurfy's is basically the go-to for information, and has the added bonus of not needing to be in game.
