Stalker 3F. It's the most "nimble" of the Stalkers. Stalkers are good because you'll learn how to play like an alligator: just poke your head over a rise - if you can see it, you can shoot it. You'll learn (often the hard way) how to use cover and stick with your teammates.
Unlike most mechs, keep your nose pointed at the enemy - MUCH smaller profile than your side. Also save up for a Seismic Module. As for build? You'll figure it out, but I recommend builds that are as low-heat as possible. People go crazy with Stalkers and they overheat easy, then they get killed easy, then the players get frustrated.
Build around a Standard 300+ engine and double Heat Sinks. As close to max armor as you can get (Although 65 on the legs is enough if you're hurting for tonnage). AMS. Grind it up, get another (5S). Get a Misery. Grind it up. Then you'll have a blast.
Stalkers are still my first love in this game.

If you look at some mechs to buy one might have an XL that you could use in many other mechs. If you buy these mechs the engines with the different upgrades, it shaves some cost of the engine that you would buy for use in other mechs.
The 3M Griffon has a 275XL, DHS
The Shadow hawk 5M also has a 275XL, endo, DHS
Wolverine 7K has a 275 XL, DHS
Centurion D, has a 300XL This is a prized engine to have.
cataphract 3D does have a 280 XL in the stock load out, but not the champion.
Jagger DD, 260 XL with Ferro.
You could also get the C1, C4 and K2 Catapults. This will help you learn, from watching. Also having LRMs make you more aware of the situations that you are in. The shadow hawks can also allow you to use lasers, Auto Cannons and missiles.
It seems that the 275/280XL (same weight) and 300XL engines are great for lights, Mediums, heavies, and even some of the assaults.
Pick the mech you like, have fun with or are good at, but look at the other variants, since you will need to go through the basics at least and maybe run them through elites for the 2X bonus for basic stills. Most mechs change in how they handle after the elites are unlocked.

Busted a gut laughing at that one. On topic the Stalker 3F is an amazing assault if you decide to go the assault route. The only changes I made to mine were double heat sinks, endo, swapped the srms for lrm 5s, and relocated the ammo to safer spots. Generally good 'mech stock or semi stock). As for a 'mech for a new player, I would recommend the Centurion 50 ton 'mechs. Overall well balanced, decently sized hit boxes, and can carry a variety of weapons and loadouts.

Seriously, you can go wrong with a Phract or Stalker(except for the N). Great mechs for new players. Of what you listed, any of them would great.
Stay way from Meds and Lights. You need to be a good pilot and have experience with maps to run them.

I bough tthe locust first, actually am pretty good, got some sick builds, but, it would probably be smart if you didn't by it
