Double Gauss IV-Four done right. Doubt it will play well, but I guess it is the Boomcada of Quickdraws.
So I Contrived A Build For The Iv-Four

Well, you're doing two things I really wouldn't recommend (letting aside the ways that I think the IV-Four is a pretty poor Quickdraw to begin with, though it's an okay jumping Jaegermech- at least in terms of hardpoints).
First off, Quickdraw legs get shot. A lot. You will even lose them to LRMs- likely before you lose your torso locations. Your ammo is generally safest either in the arms (where there is plenty of autocannon to take critical hits instead) or the side torsos (which are the smallest part of your 'mech beside the head). Especially since many opponents will specifically target your legs by habit.
Secondly, you've got paper-thin armor on your back. If a Jenner or Firestarter (or even most Spiders or Ravens) ever sees your back, you're toast within a second or two. While the big fat center torso on a Quickdraw mandates frontloading the armor to soak the incoming fire, 8 is not an acceptable rear armor value on a Heavy, especially not one going under 80 kph. Tip that back armor (on each torso, since lights will eagerly tear out your side torsos from behind) up to about a 15, and you'll be much safer without losing too much frontal protection.
I'd be inclined to push the side torso armor even further, to 20 or so on the back, just because the front side torsos get hit so rarely, but I'm not really sure how well my damage-taking experience applies with a Quickdraw moving this slowly.

Alright, I took your commentary to heart and I bumped the engine to a 290.
IV-FOUR - King Schultz Mk-III
The shaving of armor was to fit one more AC10 ammo pack in. If I drop that that ammo pack or drop the AMS and it's Ammo, I have a lot more room to work with. The AMS seems pretty effective at defending my allies in a fight when mixed in with a few others so I'm not positive it would be worth it.
IV-FOUR - King Schultz Mk-III - Plated
This one is armored up but is missing the extra ammo pack. I'm guessing that playing alone is going to be the only thing that will let me guesstimate my average ammo consumption.
So after reviewing those, despite it requiring the purchase of an XL-280, this looks like it covers everything and speed to boot.
IV-FOUR - King Schultz Mk-IV
As to why I'm trying to make this work, it's like a puzzle to me, I enjoy the process.

Okay, so the crux of the matter is that you're teetering on a balance edge here.
With 75 shots of ammo, you likely won't have the durability to last through your ammo usage.
With 60 shots, you likely don't have the ammo to keep firing through a whole match.
My first advice would be to move to a lighter autocannon so you can mount backup weapons and maximize armor without sacrificing ammo (particularly since a Cataphract 3D will do jumping dual AC/10s better with improved weight efficiency, more backup weapon slots, and while being less of a big fat target, and a Jaegermech will do non-jumping dual AC/10s better with better weapon placement, less destructible arms, and while being less of a big fat target) but I'm getting the impression that you specifically want to do this with the IV-Four instead of something it could do that the Jaeger or Cataphract can't.
Short of that, I think this is as good as you're going to be able to put together with this build idea.
