I'll put a vote in for the Dragon though, because they're awesome fun.

Jager for guns. Lots and lots of guns.
Dragon if you want to finally learn how to mech.

Locusts
Commandos
Jenners
Spiders
Cicadas
Centurions
Griffins
Wolverines
Shadowhawks
Thunderbolts
Cataphracts
Stalkers
Highlanders
Banshees
Atlases
So I've learned how to mech pretty well, I just want to add a third Heavy to the stable. That said? As a Steiner? I'd have to shoot myself if I piloted a Dragon.

I finally XP'd out my Jagers over the double XP weekend and it was a blast.
It's is, in some ways, a glass cannon of the heavy class.
It has a huge torso, easily shot at if exposed and you will likely end up with an XL engine on most high firepower builds - but the high mounted gun-arms means with good positioning and patience you can often minimize that risk with cover.
If you enjoyed your Cataphracts, you will likely love Jagers. They can't fit as much due to tonnage, but what they can fit they make excellent use of due to consistently high firing opportunities (and therefore expose themselves to less incoming fire than all but the 3D due to that variant's JJs).
Dual Gauss, Dual AC 20, Dual AC 10 + MGs, Triple AC5/UAC5 are all builds you can run with the Jager.

Jager is pretty fun too, not the most durable thing in the world, but overall a pretty fun mech. I generally run AC5/AC2 combo or AC5/ERLL on my Firebrand.

That was what convinced me to get the Protector when it was on sale last.
Unfortunately that is a double edged sword there, because it has some of the negative sides of "being like the Atlas" as well as the positives.
It is very much like playing a smaller Atlas though: you are more mobile - but you have less armor.

The Jagermech is fun too but it wont handle much incoming fire. It can put out tonnes of firepower and there are the fun dual guass and dual AC20 fits for laughs.

The VA is a solid missile boat--kind of like a mini-stalker that can go upwards of 80kph with speedtweak. This is the only variant I'd use with an XL engine. While it only has 2 energy hardpoints, it does have a ballistic which can lead to some interesting builds. I'm partial to LRMishing/brawling with it between 180-400m with 2xALRM15, 2xStreak, AC/2, TAG, BAP.
The K has a good combination of 4 arm-mounted energy hardpoints and a torso ballistic. 4xML + AC20 is a solid build. Can also do a right-handed 2xPPC+AC20. I wouldn't recommend less than an STD300 engine, though.
While the V can also boat missiles, its unique feature is 2 torso-mounted ballistics. You can pair up AC5s, MGs, or go crazy with dual LBX-10
I didn't buy the M but it comes with some of the upgrades pre-installed, so it's probably the best value. I wasn't impressed with its hard point layout but it can run the same right-handed AC20+2xPPC loadout as the K.
If you want to snipe, hill-hump, dual gauss, AC40, or just put a ton of ballistics downrange, get the Jagers.

Don't forget that the Jager is blessed with high mounted weapons. Not only are those hard points capable of loading ballistics, they are high enough up to be nearly in the pilot's line of sight (simplifies targeting) and high enough to avoid the inevitable "can't shoot the enemy without hitting the hill between us".
That is an intangible that makes a lot of difference in reality.
