Would that do?
Went with 2x large pulse and 3x med pulse at first, with way less heat sinks, to give me the headshot power I wanted, but I was overheating all over the place so I tried optimizing my DPS and uptime and came up with this.
Would that do or is the stalker just too bad a mech for brawling?

The specific laser/SRM/streak balance is a matter of preference. Try to have Artemis with SRM6s. For no Artemis, you might be better off with downgrading to SRM4. Personally, I am a fan of SRM+streak mixes, so I would suggest 5xML+3xASRM6+2xSSRM2, STD295. This reduces the ghost heat penalty for even better cooling.
Note that any SRM-heavy builds will have trouble until the SRM hit detection fix goes live. You may be better off staying away from that for now with something like 2xPPC+3xMPL+5xSSRM2. Use cool shots and remember to never alphastrike unless desperate. The mech is not as hot as it looks as long as you stick to either PPCs, or the short range stuff.
Separately, close-range Stalker setups are generally better on the 3F variant because it offers vastly superior torso twist. Consider looking for PPC/ERLL/LRM mixes for your 5M. LRM5s without Artemis can be a nice secondary weapon on a Stalker.

I don't know MUCH about assaults since I don't pilot them, but from what I've seen Stalkers turn WAY to slowly, and have to goofy of a profile to be a good brawler. They're more of the hang back and blow **** up platform, than the chewing your face off Pitbull that a Highlander, Banshee, Battlemaster can be.

I wouldn't bother with that many SRMs until the SRM fix goes in; even then, probably too many since you can't alpha-fire that many SRMs at the same time anyway.
I'll note that my Stalker 3F is 2 LL, four ML, and four SSRMs+BAP, works well in close and the LL works nice at med-long range

This is the main thing I was going to say. I'm a fan of the chassis (the only assault I really like), but if it's to be a "brawler," it needs to be the 3F or Misery. The minimal torso twist requires range on the others.

For a 'brawl' stalker 5M I would go with something more like >>> STK-5M/SRM/LL, just gives a slight bit more range with the LL's so don't get stuck being useless at 300+ range if not in a position to move in on the enemy. Would prefer some ERLL's on this build but could not find a heat efficient way of doing so.
However I do not use this ^^^ particular build and opt for the far more effective (imo) >>> STK-5M/ERLLx4.
