like the title states, here is the question:
Where can I find how many mechbays I own and how many are available, I miss that feature from the previous UI's

It should be in the 'store' menu. If you locate mech bays in there it shows how many you own.

Thanks, it only shows empty, that is a start... the next question is why do I have to pretend to buy mechbays to see how many I own?

It took me ages to figure it out too. A lot of things are very well hidden in the UI; can't say that I'm a fan of it in its current state.
