I'm somewhat limited on my mechbays, and can't justify buying more currently, so I was wondering when one sells a stripped clan mech are they able to keep whatever omnipods were fitted to it?

You need to take the omnipods out by yourself in the configuration screen.

Pods I believe are equipment, but to be sure, remove them first before you sell the mech.
Honestly, there's little reason to keep more than 2 of any of the clan mechs given how Pods work. Just make sure the ones you keep suit the quirks you want. It is nice to have 2 builds of each mech available though, so I'd probably keep 2 unless all 3 have unique CTs.
Others will tell you not to sell any mech you've purchased, but it's up to you. Different strokes for different folks and all.
