Chose Mech A, and after much deliberation now want to choose Mech B.

Has there been any word on whether or not we can change our Founder's Mech selection?

That is why i bought the Legendary pack =)

My guess the answer to your question is no. If you want to switch founder mech i would look into upgrading from Elite to legendary founder package.

Russ mentioned that they'd like give us the option sometime before launch, but there was implication of a silent "if we can" at the end.
