Will the game have support for Eyefinity?

And will the cockpits be virtual so we can use HAT or FaceTrackNoIR/Freetrack for head movement inside the cockpit and look sideways/up/down?

TrackIR has been confirmed - don't facetrack / freetrack emulate TIR?

Dunno about eyefinity, I would image so though - isn't it just a case of using a custom resolution to support that?
I think they also said multi-monitor support was in, so I doubt eyefinity users would be left out in the cold.

Head movement in the cockpit is confirmed, though I do not know if the input devices you listed are going to be supported or not.

Eyefinity support has not been stated, but as long as high resolutions (wider than normal, in particular) are supported then I would think that both AMD's Eyefinity and nVidia's Surround View would work. Dev comment on that would be interesting, but it may still be under development at this point.

If 3D could be supported that would be so awesome. Maybe a little Nvidia Vision and DDD for the AMD crowd to go around?

I know for a fact that nVidia 3d will work on anything that supports DX9 or better, though without optimization is may not look all that hot. Same holds true for DDD, though there you can tweak your own profiles to perfection, then share with the rest of the class ^.^
